Kaze no Mori is a junmai sake from Yucho Shuzo, a brewery founded in 1719 in Gose City, Nara Prefecture. It is made entirely from locally contracted Akitsuho rice milled to a 65% rice-polishing ratio, and bottled unfiltered and undiluted as a nama genshu (raw, undiluted sake). Residual fermentation carbonation gives a light, natural fizz right after opening, accompanying a pear-like aroma and a balance of sweetness, umami, and acidity that finishes clean. The brewing water is drawn from the mineral-rich, hard groundwater of the Kongo-Katsuragi mountain range, contributing to the sake's firm structure.
