Ishizuka Shuzo, based in the Takayanagi district of Kashiwazaki City in Niigata Prefecture, produces this sake as part of its katakana "Himenoi" line, a modern reinterpretation of its flagship "Himenoi" brand built around the concept of a crisp yet full-bodied taste; this particular bottling, called "RICULA," is an unfiltered, undiluted genshu drawn straight from the tank. It falls outside the standard special-designation categories, and its name combines the initials of malic acid, citric acid, and lactic acid, reflecting a brewing approach aimed at maximizing sourness. That pronounced acidity is balanced by the rich sweetness and body from the brewery's traditional four-stage mash using glutinous rice, finishing with a faint bitterness that leaves an apricot-like impression. The alcohol content is relatively low, in the 13% range, and the skull motif on the label represents the image of acids fully dissolved into the sake.
