About this sake

Sakai Shuzo, founded in 1871 in Iwakuni, Yamaguchi Prefecture, brews the Gokyo brand, named after the city's iconic Kintai Bridge, using local rice and water. This junmai nama-zake is made from Nihonbare and Yamada Nishiki rice, both grown in Yamaguchi, polished to a rice-polishing ratio of 60%, using yeast strains 1801 and 9E. It has a sake meter value of +1, acidity of 1.8, and amino acid level of 1.7, reflecting a balanced profile. Released each summer, it uses 100% Yamaguchi-grown rice and is a popular seasonal unpasteurized sake from the brewery.
