Denshu is a junmai-focused brand from Nishida Shuzoten, a sake brewery in Aomori City, Aomori Prefecture, and this bottle is a junmai daiginjo made with Yamada Nishiki rice polished to 45%. At this 45% milling rate the rice's natural umami comes through clearly, giving the sake an elegant, rounded fullness with body that still finishes crisply.
