About this sake

Nirugame (涅槃龜) is a junmai sake from Aramasa Shuzo, a brewery founded in 1852 in Akita Prefecture, and it belongs to the Private Lab series, whose bottles are themed around the four mythological guardian beasts, with this label representing Genbu, the black tortoise. It is made with a rice polishing ratio of 80%, a comparatively low level of polishing that normally risks producing off-flavors, but the brewery applies ginjo-style techniques to keep the taste clean and refined despite the coarser rice. Aramasa Shuzo uses only Akita-grown rice, adds no additives, and produces junmai-only sake, and the Nirugame name is said to reference the rock band Nirvana, a favorite of the brewery's eighth-generation owner.
