This junmai daiginjo from Asahi Shuzo in Iwakuni, Yamaguchi Prefecture, the region it comes from, is made from Yamada Nishiki, the finest sake brewing rice, polished to the extreme of 23%. The rice, carefully milled over more than seven days, gives an overwhelming transparency with no trace of off flavors and a refined sake quality. A bright aroma, a clean honey like sweetness on the palate, and a finish that breaks off cleanly yet lingers long are its features.
