About this sake

Considered Kuheiji's signature bottling, this junmai daiginjo is brewed from Yamadanishiki polished to 50%. A subtly floral nose gives way to mineral notes and acidity reminiscent of a white wine, carried on a very light, crisp body that flows straight into a clean finish. Serve it with oysters, white fish sashimi, or carpaccio, and that mineral edge really comes alive.
