About this sake

Fukuda Shuzo is a brewery based in Hirado, Nagasaki Prefecture, and its flagship brand Fukutsuru takes its name from its history as the sake once served to the lords of the Hirado domain. This Ginjo Koshu is made from Yamada Nishiki rice milled to a 60% seimaibuai and long aged at low temperature in the brewery's original Genroku storehouse, built at its 1688 founding. The bright aroma typical of fresh ginjo mellows with age, giving way to a rounded, matured fragrance and a broad, rich umami depth from the rice, finishing with an elegant lingering note. It can be enjoyed chilled, at room temperature, or warmed, with gentle to hot serving temperatures said to bring out its depth particularly well.
