About this sake

A limited release of Shichiken, the leading local brand that Yamanashi Meijo, in Hakushu, Hokuto City, Yamanashi Prefecture, has brewed with the subterranean water of Kai-Komagatake since its founding in 1750. "Kuradashi" is a honjozo-grade muroka nama genshu released each year in time for the brewery's open-house event, made from Hitogokochi rice at a 70% rice polishing ratio and 19% alcohol. Drawing on Shichiken's own technique beyond the honjozo category, it has a smooth, soft mouthfeel, with an apple-like aroma and taste in which body, acidity, and sweetness blend quietly. The concentrated umami typical of an unfiltered genshu and a fresh, crisp rice flavor make it known as a special limited item distributed for visitors to the brewery.
