Mizuchi is a low-alcohol sake series produced by Sakai Shuzo in Iwakuni, Yamaguchi Prefecture, under the Gokyo brand, built around junmai-grade sake with rice polishing ratios around 70%. The sake is pressed partway through fermentation, a method that leaves residual sweetness and acidity while keeping alcohol content low, and the series includes several variants such as sparkling namazake and lighter junmai types distinguished by color. It has a citrus-forward, fruity aroma with brisk acidity, and alcohol levels ranging roughly from 5% to 12%, giving it a noticeably lighter body than standard sake. The name refers to the mizuchi, a legendary dragon-like creature said to precede the full dragon form, symbolizing a stage before becoming conventional sake.
