About this sake

Isojiman is produced by Isojiman Shuzo, a brewery in Yaizu, Shizuoka Prefecture, founded in 1830. This Junmai Ginjo uses Yamada Nishiki rice from the Special A district of Tojo, Hyogo Prefecture, polished to around 50%, and is fermented with Shizuoka's own acetate isoamyl-type yeast. It offers a gentle fruity aroma reminiscent of white peach, melon, and pear, with a clean, balanced finish and a subtle rice-derived umami. The brand is well suited to seafood dishes and was served as the toasting sake at the 2008 G8 Toyako Summit dinner.
