니자에몬
Nizaemon is produced by Kokuryu Shuzo, a sake brewery based in Eiheiji, Fukui Prefecture, and takes its name from Ishidaya Nizaemon, the brewery's first-generation master at its founding in 1804. It is a Junmai Daiginjo made with Yamada Nishiki rice from the Tojo district of Hyogo Prefecture, polished down to 35%, with the sake drawn using the tobin-gakoi (single-batch dripping) method and aged through a proprietary process. It shows a fresh, elegant aroma with subtle notes reminiscent of pear, along with a balanced, refined flavor that is neither too sweet nor too dry. It is released in limited quantities once a year, typically around November.
