Gokyo is produced by Sakai Shuzo in Iwakuni, Yamaguchi Prefecture, and takes its name from the Kintai-kyo bridge that spans the Nishiki River. This junmai sake is milled to a seimaibuai of 60%, made with Nihonbare and Yamada Nishiki rice and brewed with soft water drawn from the Nishiki River. It offers a subtle ginjo-style aroma with a soft, light body balanced by a relatively pronounced acidity, and it is also served warmed to bring out that acidity.
