Aoki Shuzo, a brewery in Minamiuonuma, Niigata Prefecture, has been producing sake for about 300 years since its founding in 1717, and its flagship brand Kakurei is said to have been named by local scholar Suzuki Bokushi. This Junmai Daiginjo represents the brand's top-tier product, made from Yamada Nishiki rice grown in the Tojo district of Hyogo Prefecture (a Special A-rated area) and polished down to 37%. It is noted for a fruit-like aroma and a gentle, rice-derived umami that unfolds on the palate, and it is sold in a wooden gift box.
