About this sake

Houhai is brewed by Miura Shuzo, a family-run brewery founded in 1930 in Hirosaki, Aomori Prefecture, using subsoil water drawn from the Iwaki and Akakura mountain systems. This junmai ginjo is made from Houhai rice, a variety developed by the Aomori prefectural government and grown under contract exclusively for this brewery, milled down to a seimaibuai of 55%. It offers a soft, rounded umami with an elegant aroma that spreads through the palate, along with fruity sweetness and acidity that finish clean and crisp. Produced in small batches by a small family brewery, it is regarded as the flagship product of the Houhai brand.
