This junmai daiginjo is brewed by Kangiku Meijo in Sanmu City, Chiba Prefecture, using Yamada Nishiki rice from Hyogo and Akaiwa Omachi rice from Okayama. Milled to a seimaibuai of 50%, it is bottled as an unfiltered, unpasteurized genshu and released once a year in limited quantity as a tribute to people starting new chapters in life. The palate combines the rich umami of Yamada Nishiki with the sharp complexity of Akaiwa Omachi, showing fresh, juicy sweetness and acidity along with a faint natural effervescence from fermentation. The label features wings and a sun motif symbolizing new beginnings.
