This junmai sake is produced by Mori Shuzojo, a brewery in Hirado, Nagasaki Prefecture, established in 1895. It is made entirely from rice grown in the terraced paddies of Kasuga, a UNESCO World Heritage area, milled to a 70% seimaibuai, with a low alcohol content of 9%. The high acidity gives it a sweet-and-sour profile often compared to white wine. It received a gold award in the junmai category at the London Sake Challenge and is best served chilled, in a wine glass.
