Tatsuriki is produced by Honda Shoten in Himeji, Hyogo Prefecture, a brewery based in Yamada Nishiki country and known for rice-forward sake making. This Tokubetsu Junmai is milled to a seimaibuai of 65% and made from Gohyakumangoku rice grown in Hyogo, released as the season's first pressing. It shows an apple-like aroma with fresh, muscat-like sweetness and acidity, backed by solid rice-derived umami and a crisp, medium-dry finish. Bottled unfiltered and unpasteurized (nama genshu), it retains a slight natural carbonation and is sold as a seasonal, refrigerated release.
