Ryuriki Junmai Daiginjo "Kome no Sasayaki" Akitsu is produced by Honda Shoten, a brewery founded in 1921 in Himeji, Hyogo Prefecture. This junmai daiginjo is made from Yamada Nishiki rice grown in the Akitsu district of Kato City, part of Hyogo's Special A-graded region, cultivated using organic fertilizer, the "no-ji" growing method, low pesticide use, and natural drying, then polished down to a rice-polishing ratio of 35%, with alcohol content around 16%. The aroma suggests apple and pear with a gentle rice fragrance, changing subtly with temperature, while the palate shows a rounded texture typical of junmai daiginjo, with the rice's soft sweetness balanced by fruit-like fragrance, finishing clean and refreshing. According to one retailer, after bottling the sake is aged for over three years at minus 3°C, so the aroma retains its freshness while the palate becomes mellow through the marriage of water and alcohol.
