About this sake

This sake is produced by Shimizu Seizaburo Shoten in Suzuka, Mie Prefecture, a brewery founded in 1869 that remains the only sake maker in the city, drawing on subsoil water flowing from the Suzuka mountain range. Classified as Daiginjo, it is made from Yamada Nishiki rice polished down to 40% and fermented slowly at low temperatures. The aroma suggests white peach, Japanese pear, yuzu and white flowers, with a rich sweetness and juicy acidity that resolve into a crisp, clean finish with a mineral-like clarity. It belongs to a premium line within the brewery's Zaku series, positioned above the standard offerings.
