A junmai daiginjo brewed by Shimizu Seisaburo Shoten in Suzuka City, Mie Prefecture, from Mie-grown Yamada Nishiki polished to 50%; nakadori refers to the clearest part of the pressing, excluding the early arabashiri and the later seme. A showy, richly fruity aroma, a soft sweetness, and a comfortable acidity combine in an elegant taste. It has a concentrated, fruity aroma recalling lychee and melon, and the deep, bright flavor typical of Yamada Nishiki gives an impression close to white wine. A signature bottle of the Zaku series, which was served as the toast sake at the Ise-Shima Summit, it has won awards in many competitions in Japan and abroad.
