About this sake

Morishima Shuzo is a brewery founded in 1869 in Hitachi City, Ibaraki Prefecture. Its Junmai Daiginjo "Suisei" under the Morishima line is made entirely from Suisei rice grown in Hokkaido, polished down to a rice-polishing ratio of 50%. The sake shows a smart, light umami accented by a crisp touch of acidity, finishing with a soft, refined aftertaste, and it carries a slight effervescence when first opened. It reflects the Morishima series' concept of value found in absence and a fleeting quality, expressed through the character of the Suisei rice.
