About this sake

This junmai sake is brewed by Akabu Shuzo in Morioka, Iwate Prefecture, using locally grown Ginginga rice milled to a 60% seimaibuai. It is an unfiltered genshu, pasteurized once in the bottle, and belongs to the seasonal "MOUNTAIN" line meant to evoke a deep, mysterious green mountain. The aroma is subtle and citrus-like, reminiscent of pink grapefruit, with a light natural carbonation on the palate and a finish marked by balanced acidity and a faint bitterness. Akabu Shuzo rebuilt after the 2011 tsunami and is now led by its young sixth-generation toji, Ryunosuke Furudate.
