Gonemon is a junmai daiginjo brewed by Yano Shuzo, a sake maker in Kashima, Saga Prefecture, that has been operating for over 200 years since its founding in 1796, using water from the Tarodake mountain system and locally grown Yamada Nishiki rice. The rice is polished to 38% and fermented slowly at low temperatures, yielding a sake of around 16% alcohol. It shows a fragrant, apple-like aroma with a smooth, slightly sweet and full-bodied flavor free of off-tastes, and it has received recognition at competitions including the Fukuoka Regional Taxation Bureau's sake tasting contest and the International Wine Challenge.
