Nifudazake Dewasansan is brewed by Kamonishiki Shuzo, a sake brewery located in Kamo City, Niigata Prefecture. Founded in 1893, Kamonishiki has long been cherished as a representative local brand, and its flagship label 'Nifudazake' is crafted by a young toji applying traditional brewing methods to suit modern dining. The rice used is Dewasansan, an original sake rice variety from Yamagata, a region known for ginjo-style brewing, milled to a 50% seimaibuai. The flavor shows shifting notes reminiscent of lychee, apple, peach and grapefruit, a characteristic often found in sakes made from Dewasansan rice, with a fresh acidity and a smooth, well-rounded sweetness that spreads gently across the palate.
