About this sake

Sanbuchi Homase is produced by Hananoka Shuzo, a sake brewery in Nagomi, Kumamoto Prefecture, using water and rice sourced entirely from the Kikuchi River basin. It is a Junmai-grade sake made with Homase, an Edo-period Kumamoto heirloom rice variety that had disappeared and was later revived and grown through natural cultivation methods without fertilizers or pesticides. The sake shows fragrant notes reminiscent of banana and pineapple, with a layered, complex flavor shaped by the diversity of local soil, water, and microorganisms. Produced in limited quantities, it reflects the brewery's focus on rice, water, and yeast native to its home region.
