About this sake

Ubusuna Homase Go-nojo is a junmai sake produced by Hananoka Shuzo, a brewery founded in 1902 in Wamou, Tamana District, Kumamoto Prefecture. It is made from Homase, an Edo-period Kumamoto native rice variety grown along the Kikuchi River basin, and meets the five conditions of the "Go-nojo" (five-cultivation) standard: kimoto fermentation, pesticide-free cultivation, fertilizer-free cultivation, wooden-vat brewing, and local rice. The sake shows floral aromas reminiscent of banana and pineapple, with layered complexity shaped by the terroir and the diversity of yeasts and microorganisms present in the brewing process, at roughly 13% alcohol.
