Ubusuna Yamada Nishiki is produced by Hananoka Sake Brewery in Wamizu-cho, Tamana District, Kumamoto Prefecture, using Yamada Nishiki rice grown locally along the Kikuchi River basin. Classified as junmai, the rice is polished to a 55% ratio and fermented with Kumamoto yeast No. 9, yielding an alcohol content of about 13%. On the palate, the sake shows a distinctive yeast aroma balanced by the sake's natural sweetness and a soft, viscous texture drawn from the local brewing water, giving an impression of fresh liveliness that seems to burst in the mouth.
