Sugishiki Edo no Natsuzake is a junmai sake brewed by Sugii Shuzo, a brewery in Fujieda City, Shizuoka Prefecture that traces its founding back to 1842, and it is released each year as a summer-limited product. It uses Shizuoka-grown Homarefuji rice milled to a 70% seimaibuai, fermented with the low-vigor Association No. 28 yeast, a combination that tends toward sweetness before the brewery dilutes it with water to bring alcohol down to around 14.4% and acidity to roughly 3. The result is a modern-style sake balancing sweetness and acidity, best served well chilled or over ice. Sugii Shuzo is known for its emphasis on kimoto and yamahai brewing methods across much of its production.
