This junmai ginjo is brewed by Tsuchiya Sake Brewery in Saku, Nagano Prefecture, using underground water from the Chikuma River and locally grown rice. The rice used is Hitogokochi, milled to a polishing ratio of 59%. It has a fruity aroma and a clean, crisp finish, making it approachable even for those new to sake. Tsuchiya Sake Brewery was founded in 1900 and continues to produce this sake under its flagship brand, Kame no Umi.
