Ugonotsuki is produced by Aihara Shuzo, a brewery founded in 1875 in Kure, Hiroshima Prefecture, on the Seto Inland Sea coast known as the birthplace of Hiroshima's soft-water brewing tradition. This Daiginjo is crafted using rice polished to around 35–40%, following the brewery's practice of treating every release with daiginjo-level care. The sake shows delicate aromas reminiscent of melon or Asian pear, with a smooth, gentle mouthfeel shaped by the region's naturally soft water and a clean, refined finish. Aihara Shuzo has built a reputation for high polishing ratios and a near-total focus on premium classifications, earning the brand repeated gold medals at Japan's national new sake competition.
