About this sake

Chichibu Nishiki Junmai Daiginjo is brewed by Yao Honten Co., Ltd. in Chichibu City, Saitama Prefecture. Founded in 1749, the brewery has long supplied sake to the local community and draws its brewing water from a source fed by Mt. Kobushigatake. This junmai daiginjo is made from Miyama Nishiki rice grown in Nagano Prefecture, milled in-house to a 50% seimaibuai and fermented at low temperature, with an alcohol content of 16–17%. It shows a fragrant ginjo aroma and a mellow, delicate flavor built on the rice's natural umami.
