This junmai daiginjo comes from Yamamoto Honke, a brewery founded in 1677 in the Fushimi district of Kyoto. It is made from Yamada Nishiki rice milled down to 50%, with the freshly pressed sake from winter placed straight into cold storage and aged slowly until its flavor rounds out. On the palate it shows a subtle sweetness typical of junmai sake along with fruity aromas, delivering a mellow, rounded body. It has been awarded the top gold prize in the premium category of a hot-sake (kanzake) competition.
