The futsushu of Kenbishi Shuzo, a leading brewery in the Nada district of Kobe, Hyogo Prefecture. The polishing ratio is about 70% and the alcohol content 15.8%; because the brewery adjusts the polishing ratio each year to suit the rice crop, it does not state a polishing ratio on the label, which is a hallmark of the brand. The taste is soft with dryness and umami in balance, and warming brings out the umami and the crisp finish further.
