About this sake

Kiyasho Shuzo is a brewery founded in 1818 in Nabari, Mie Prefecture, working with the inland climate of the Iga basin, surrounded by the Suzuka and Kii mountains, and spring water drawn from the Nabari River. Takasago is the brewery's original brand name, predating its now better-known label Jikon, and this bottling is a Junmai Daiginjo made from Mie-grown Yamada Nishiki rice milled down to 45%. It shows a mild citrus and fruit aroma with a fresh, smooth texture, clean acidity, and a crisp, clean finish. While Jikon is built to stand on its own, Takasago is designed as a food-pairing sake, meant to complement dishes rather than dominate them.
