About this sake

This sake is brewed by Kiyasho Shuzo in Nabari City, Mie Prefecture, a brewery founded in 1818 that took its Jikon label name from a Zen phrase meaning to live fully in the present, given by the sixth-generation owner-brewer. It is a Junmai Ginjo milled to 50%, made mainly with Yamada Nishiki rice from the local Iga region, with different rice varieties used in rotating monthly releases. Rice washing and koji-making are done by hand and fermentation proceeds slowly at low temperatures, producing a profile balancing clear bitterness, fruity aromatics, and clean sweetness. Production volumes are limited, making the sake hard to find even at authorized retailers.
