Denshu Tokubetsu Junmai Kojo Nishiki is brewed by Nishida Shuzoten in Aomori Prefecture, using the local sake rice variety Kojo Nishiki as its raw material. It is classified as tokubetsu junmai with a rice-polishing ratio of 55%, an alcohol content of 16%, and an acidity of 1.4. The sake shows a gentle rice-forward aroma, a soft, light mouthfeel, and clean rice-derived sweetness and umami that carry through a balanced finish. Kojo Nishiki was Aomori's first sake rice variety, and Nishida Shuzoten revived it through contract farming, remaining the only brewery currently using this rice.
