Denshu Junmai Daiginjo Akita Sake Komachi is produced by Nishida Shuzoten, a sake brewery located in Aomori Prefecture in northern Japan. This junmai daiginjo is brewed from Akita Sake Komachi rice, a sake rice variety cultivated in neighboring Akita Prefecture, polished to a rice-milling rate of 40%. Tasting notes commonly describe a clean, pear-like aroma along with a soft, gently sweet and juicy umami that carries through to a smooth, elegant finish. It is one of a small limited series from the Denshu brand that uses Akita Sake Komachi rice at different polishing ratios, with 40% representing the most highly polished version in that lineup.
