About this sake

Denshu Tokubetsu Junmai is produced by Nishida Shuzoten, the sole sake brewery in Aomori City, whose Denshu label was created in 1974 to showcase pure rice sake made without added brewing alcohol or sugar. This Tokubetsu Junmai is brewed from locally grown Hanafubuki rice milled to a 55% seimaibuai, and, like the rest of the Denshu line, it forgoes activated-charcoal filtration, giving the sake a pale straw-yellow color. On the palate it offers a rounded, rice-driven umami with balanced acidity and a clean, moderately dry finish, often accompanied by soft fruit and floral notes such as pear, apple, and banana. It is pasteurized just once after bottling and stored under refrigeration, and has long been regarded as a benchmark junmai sake, at times called a 'phantom sake' for its limited availability outside Japan.
