Omine Shuzo is a sake brewery in Mine City, Yamaguchi Prefecture, founded in 1822, closed in 1955, and revived in 2010. A seimaibuai of 50% places this bottle in the brewery's own "3-grain" category, part of a system that replaces standard sake classifications with a grain-count label. Brewing water is drawn from the Beppu Benten Pond spring, filtered through the limestone of the Akiyoshidai plateau, a calcium-rich soft water said to support smooth fermentation and a clean finish. The sake shows fruity notes reminiscent of white peach or muscat grape with brisk acidity, reflecting the brewery's practice of bottling undiluted junmai genshu.
