Nizaemon is produced by Kokuryu Shuzo, a sake brewery founded in 1804 in Fukui Prefecture, and is named after the brewery's founding brewmaster. It is a daiginjo-grade sake made from rice polished down to 35%, with the sake collected drop by drop in tobin (single-bottle) vessels and matured using the brewery's own proprietary aging method. The result is a fresh, elegant sake with fragrant, fruity notes reminiscent of melon, balanced by a gentle umami and a refined, dignified character. It is released once a year, typically in November, as one of Kokuryu's limited flagship bottlings.
