Hinotori is a junmai sake made by Shinsei Shuzo in Akita Prefecture, brewed from rice polished down to a seimaibuai of 35%. It follows the kijoshu method, in which sake rather than water is added at the final stage of fermentation, causing the mash to ferment again and yield a richer, sweeter result. The flavor shows dense, mango-like sweetness balanced by pineapple-like acidity, with a smooth, somewhat viscous texture. Shinsei Shuzo produces it using the kimoto method and its own house yeast (Association No. 6), without added distilled alcohol.
