Nagayama Honke Shuzojo, founded in 1888 in Ube City, Yamaguchi Prefecture, brews with medium-hard water drawn from the Koto River, whose source lies in the Akiyoshidai karst plateau. This Tokubetsu Junmai, labeled TAKA Soumei, has a rice-polishing ratio of 60% and is made using a koji strain called "Soumei," which combines characteristics of both white koji and yellow koji, resulting in a version tailored for summer drinking.
