About this sake

A junmai daiginjo of Joki Gen brewed by Sakata Shuzo in Yamagata Prefecture, using Aiyama, a rare sake rice grown only in parts of Hyogo Prefecture. Aiyama is of the same lineage as Yamada Nishiki but dissolves easily, so it is known to require skilled brewing technique. A faint fruit aroma, a fresh taste, the smooth mouthfeel that comes from cold aging in the bottle, and the clean, lustrous finish typical of Aiyama are its hallmarks.
