The opening entry in the low-ABV ALPHA series, made from Akitsuho rice polished to 65% and brought down to a light 14%. The aroma stays reserved, but a gentle sweetness and balanced acidity come through clearly, giving surprising volume for something this low in alcohol. It's an easy, breezy match for salads, white-fish sashimi, cold tofu, or a simple cucumber salad.
