Senkin is a brewery founded in 1806 in Sakura City, Tochigi Prefecture, known for using local rice grown along the same underground water source as its brewing water to express the character of the land. Its lineup spans several grades rather than a single classification, built around revived Edo-era techniques such as kimoto fermentation, no added yeast, and wooden-vat brewing. The resulting sake typically shows kimoto-style acidity paired with sweetness, followed by savory rice notes and a gentle bitter-spicy finish. Notably, some of its sake is aged in underground cellars carved from Oya stone.
