About this sake

AKABU is a sake brand from Akabu Shuzo in Morioka, Iwate Prefecture; the brewery originally stood in Otsuchi on the Sanriku coast until it was destroyed by the tsunami following the 2011 Tohoku earthquake and was rebuilt in Morioka in 2013. Its junmai sake is milled to a 60% rice-polishing ratio, while the junmai ginjo is milled to 50%, both brewed with Iwate-grown rice and soft local water. The soft water gives the sake a gentle, smooth texture with a fresh, fruity aroma, and it pairs particularly well with seafood. Since the brand's launch in 2014 it has gained recognition, including a top award at the Iwate Prefecture New Sake Tasting Competition in 2017.
