About this sake

Ubusuna (産土) is a Junmai brand launched in 2021 by Hananoka Shuzo, a brewery based in Nagomi, Tamana District, Kumamoto Prefecture. It is made with Yamada Nishiki rice grown in the same Kikuchi River basin as the brewery, milled to a 55% seimaibuai and fermented using the traditional kimoto method with Kumamoto No. 9 yeast, producing an unfiltered, undiluted namazake. The sake shows fruit-forward aromas of melon, pear, and muscat grape with a gentle natural effervescence, and a light body around 13% alcohol.
