Ohmine 3-Grain Dewa Sansan is produced by Ohmine Shuzo, a sake brewery in Mine, Yamaguchi Prefecture, founded in 1822 and revived in 2010 after decades of dormancy. It is a junmai sake made with Dewa Sansan rice polished to 50%, brewed using spring water drawn from the Bentenike pond area. The sake shows citrus notes with fresh, green herbal nuances, a juicy fruit-like sweetness balanced by youthful acidity, and a clean, mineral-tinged finish. Rather than using the traditional junmai/ginjo classification, Ohmine labels its sakes by rice-polishing ratio, and this bottling falls under its "3-grain" (50% or higher) category.
